That right there is a tagine. A what? A tagine (or tajine) is a North African slow-cooker. It's the way they did it before there were electric slow cookers, before Dutch ovens, even. Usually made from ceramic-- either glazed or unglazed-- the shape keeps in moisture while cooking and redistributes steam back into the food with its conical shape. It's a beautiful, classic way to slow cook stews, meats, or just vegetables. Use it on the stovetop, grill, or hot coals.
